In a major culinary score for the city of Eagan, the new Omni Viking Lakes Hotel announced that James Beard award-winning chef Ann Kim will be in charge of culinary programming at the hotel’s restaurant, Kyndred Hearth.
Kim, a “lifetime Vikings fan,” will create a menu centered around a large, copper-encased, wood-fired pizza oven. The oven will be the centerpiece of the restaurant and helped inspire the name, along with ‘kyn,’ the Old Norse word for family.
Kim’s signature pizzas will be front and center on the menu, but there will also be handmade pastas, small plates and the chef’s take on favorites like the fried fish sandwich, cheeseburger, a Korean fried chicken sandwich and her favorite dessert, soft-serve ice cream.
Because it’s a hotel restaurant, we’ll also get a breakfast menu from the chef that will include fun items like breakfast sandwiches with ingredients like onion jam and maple-glazed pork belly on a house-made Japanese milk bun; a savory grain bowl with pickled and fermented vegetables, poached egg and gochujang vinaigrette; a twist on congee that will include jasmine and local wild rice and fluffy ricotta pancakes.
The Omni Viking Lakes Hotel is adjacent to the Vikings training facility off of I-494 in Eagan. The restaurant is expected to open in October.
